Pioneer company Ecoflora has managed to unlock the commercial uses of Jagua (Genipa americana), a native tree found in Colombia and many other South American countries. With the support of Partnerships for Forests, its team of experts has developed and patented the process to extract a stable, natural blue colourant from this species – the last colour the food industry needed to complete the spectrum.
